I tested about 60 interactions with the new IE and Stormrazor

TL;DR

Sheen, IBG, and Trinity Force get partly converted to true damage by IE if the autoattack crits.
Statikk Shiv, too.
A lot of enhanced autoattacks benefit from IE's true damage conversion.
Don't build Stormrazor on Ashe.
Lifesteal applies to IE's true damage.
Crit Garen is dead.
Jhin's fourth shot and IE synergize well.
Crit MF's R is out of control.
Mordekaiser has bugs.
Stormrazor is bugged with Renekton's W. Full AD crocodiles, read below!
Stormrazor is slightly better on Sivir than it should be.

END TL;DR

I needed another reason to procrastinate today so I hopped into Practice Mode and tested a lot of interactions with the new crit items. Most of these are enhanced autoattacks or on-hit effects, so I tested whether the bonus damage can critically strike, whether the whole enhanced autoattack benefits from IE's true damage conversion if it critically strikes, and whether Stormrazor deals the correct amount of bonus damage. I wrote an extra math section at the end.
Also a lot of people seem to not know this, but Stormrazor's bonus damage scales with crit you bought from items. With 0% crit, it's 60% bonus damage. With 30% crit, 80% bonus damage. If you have 60% crit or more, Stormrazor deals 100% bonus damage.

Runes and Items

  • Lifesteal: Lifesteal applies to all true damage dealt by IE. This actually includes AOE abilities like Garen's E and Statikk Shiv!
  • Ravenous Hunter: Fully applies to IE's true damage, even if the critting ability is AOE (Ravenous Hunter is supposed to be 33% efficient for AOE)
  • Energized: Kircheis and RFC don't interact with IE or Stormrazor. Statikk Shiv gets converted to true damage if it crits, even if it gets procced by an attack that cannot crit, such as Ezreal's Q. Shiv interacts correctly with Stormrazor.
  • Sheen: If the triggering autoattack crits, the bonus damage from Sheen and Trinity Force benefits from the conversion. Iceborn Gauntlet deals some true damage to the primary target, all secondary targets only take physical damage. Lich Bane doesn't interact with Infinity Edge.
  • Runaan's Hurricane: Bug: When Stormrazor procs, the bolts should deal 180% damage. Weirdly enough, they actually do between 202%-208%. Also, if my math is right, IE converts 17% of the bolts' damage, not 15%.
  • Wit's End, Blade of the Ruined King, Nashor's Tooth, Guinsoo's Rageblade, Bloodrazor, Titanic Hydra, Duskblade, Muramana: No interaction with either IE or Stormrazor.
  • Press the Attack: Isn't converted to true damage.
  • Conqueror: With Conqueror and IE, 32% of all crit damage gets converted to true damage. See the math section below for more.

Champions

  • Aatrox: His W doesn't interact with Stormrazor or IE in any way :(
  • Anivia: Neither IE nor Stormrazor interact with her E.
  • Ashe: IE converts Ashes W because it counts as a crit (thanks CMcawesome) and Ashe can lifesteal off the true damage. For autoattacks, crits work differently on Ashe, go read her wiki page if you didn't know. IE only converts attacks that crit, e.g the attacks that apply the triple slow. IE does convert her first autoattack if it crits, even though that attack doesn't apply her passive's bonus damage. Stormrazor crits apply the increased slow but they don't deal any bonus damage. Don't buy Stormrazor on Ashe, also IE is weaker on her until she gets 100% crit. See the math section for IE.
  • Akali: Neither her passive nor her Q interact with crits or IE.
  • Blitzcrank: The bonus damage from his E doesn't crit, not even with Stormrazor, but it gets converted by IE. (thanks Wflagg).
  • Camille: Her Qs can't crit, not even with Stormrazor. If her Q procs Shiv, it cannot crit, not even with Stormrazor or 100% crit. Her R's on-hit doesn't interact with anything.
  • Caitlyn: Good candidate for the new IE. If the triggering autoattack crits, the headshot and W bonus damage get converted. As neither bonus damage interacts with crits, Stormrazor only deals 60%-100% AD extra damage. See her math section for more on headshot and IE.
  • Corki: Corki interacts correctly with the new items. With IE, his crits correctly convert Statikk's and Sheen's bonus damage to true damage (except for Lich Bane).
  • Darius: TIL Darius' W can fully crit. It also gets properly converted to true damage with IE. Stormrazor deals a bit more bonus damage than it should, though. I'm getting 70% bonus damage at 0% crit and 85% at 30%.
  • Dr Mundo: the AD from his E can obviously crit but the %own HP bonus damage can't. It does get converted to true damage with IE though.
  • Draven: his Q bonus damage doesn't crit but IE converts it to true damage if the autoattack does. Crits just deal 100%AD bonus damage in addition to his Q (60%-100%AD for Stormrazor). I don't have Draven so my friend I_am_a_kobold_AMA tested this for me. Thx bro.
  • Evelynn: IE doesn't interact with her E at all.
  • Ezreal: His Q can't crit. If Shiv crits on his Q, IE only converts Shiv's damage and Sheen is unaffected. Stormrazor doesn't interact with his Q at all, even if he has a Shiv.
  • Fiora: The first hit of her E can't crit, not even with Stormrazor. Her Q interacts with StormrazoShiv/Sheen the same as Ezreal's Q. Her E's second hit is correctly converted to true damage and overrides Stormrazor's damage.
  • Gangplank: While only the Attack Damage portion of his Q and E crit, the whole attack/barrel benefits from IE's true damage conversion. That means Q base damage, Sheen, and E bonus damage to champions. Stormrazor interacts properly with his Q and E. Attacking a barrel that still has 2 or 3 hit points wastes Stormrazor tho.
  • Garen: His Q works the same as Draven's Q. Stormrazor doesn't interact with his E in any way. Each spin of Garen's E can crit separately for 50% bonus damage, both the base damage and the AD scaling can crit. IE properly converts his E to true damage and, interestingly, lifesteal is fully applied to the true damage. See his math section for more.
  • Gragas: Q doesn't interact with Stormrazor or IE at all.
  • Graves: Graves' crits work differently. Go read his wiki page if you didn't know. IE interacts properly with his passive. Stormrazor makes him shoot 6 bullets but each one only deals about 26%(~ 32% with 30% crit) bonus damage. If you hit all 6 bullets, you deal about 70% bonus damage in total (~84% with 30% crit). Shiv is unaffected by his weird crit scaling. Also, see his math section for more.
  • Hecarim: His E's bonus damage doesn't crit but if the basic attack does, the whole attack benefits from IE's true damage conversion. Stormrazor works correctly and deals 60%-100%AD bonus damage (scaling with your crit chance).
  • Jax: Neither his W nor his R interact with StormrazoIE.
  • Jayce: His Cannon form W can crit and doubles its total damage. Stormrazor causes the entire autoattack to deal 60%-100% bonus damage. IE works properly.
  • Jhin: IE converts his entire fourth hit, even the %missing HP part. Stormrazor causes his fourth hit to deal less damage than it should though. Jhin mains, Ctrl-F search Pantheon, Shaco, or Miss Fortune to cry. Also, IE converts Jhin's R's 4th shot and Jhin lifesteals off of the true damage.
  • Jinx: The extra 10% damage that her rockets deal doesn't crit anymore. She deals 110% AD with rockets, increased to 210% when she crits (170% with Stormrazor). The entire rocket's damage benefits from IE's conversion.
  • Kalista: IE works properly. Stormrazor deals a bit less damage than it should, only dealing 57% bonus damage (78% with 30% crit).
  • Karthus: Neither IE nor Stormrazor interact with his Q.
  • Kindred: Her E's bonus damage cannot crit but her whole E gets converted by IE. Even the %missing HP part. (thanks Tutajkk).
  • Leona: The magic damage from her Q and R can't crit. Leona's Q and R both get converted by IE. This seems fishy because no other bonus magic damage gets converted (except for Statikk Shyv). Thanks OmegaSquadVeigar.
  • Lucian: IE works properly with his passive. I can't get Stormrazor to make the second hit crit and I feel stupid for even trying.
  • Master Yi: His Q doesn't interact with Stormrazorrazor but IE properly converts the damage if it crits.
  • Miss Fortune: Neither crits nor IE interact with the bonus damage from her passive. IE properly converts her Q if it crits. Stormrazor causes her Q to deal 67% bonus damage (both base damage and AD part are affected) (84% bonus damage with 30% crit). If her Q's first hit kills the target, the bonus damage is increased to 100%. Her ult can crit for 20% bonus damage, that is both the AD and the AP part. If one of R's waves crits, IE properly converts 15% of its damage to true damage. See her Math section for more. No interaction with Stormrazor.
  • Mordekaiser: His Q can't crit, same as Camille's. Neither IE's true damage conversion nor Stormrazor work on his Ghosts. I even tried buying IE on Mordekaiser, still no dice. That's 2 new bugs for the bug list! Again, thx I_am_a_kobold_AMA for helping me there
  • Nasus: Q's base damage can crit but the bonus damage from stacks cannot (thanks Tutajkk). Both get converted by IE.
  • Nautilus: Passive bonus damage doesn't interact with crits but it does get converted by IE.
  • Nidalee: When her Q crits, it deals 100%AD bonus magic damage (60/80/100%AD with Stormrazor and 30/60/100% crit). This looks funny because her Q's minimum damage is lower than 100% AD.Without AP and against a full HP target, it looks like crits more than double its damage. IE converts the whole Q if and only if the Q crits. Q'ing a hunted target doesn't count as a crit. (thanks vargleyton).
  • Nocturne: Passive bonus damage doesn't interact with crits. Only the passive's damage to his primary target gets converted by IE, any secondary targets take physical damage only. Somehow Vi's E works differently.
  • Pantheon: IE converts his Q if it crits and Pantheon can lifesteal off the true damage. Stormrazor does not work on his Q. If he has Stormrazor ready and attacks a low HP target, his E passive will override Stormrazor so no damage gets wasted. The Stormrazor proc does get consumed though.
  • Quinn: Her passive doesn't interact with crits or IE :(
  • Rek'Sai: Her Q can crit, but only to her primary target. IE converts the Q but only the damage to the primary target (thanks Bazman99).
  • Rengar: His Q bonus damage doesn't crit but it does get converted by IE. Same for his enhanced Q. I didn't check his R because I still have PTSD from this ability.
  • Renekton: His W can't crit but Stormrazor causes it to deal ... less damage. All two (three if empowered) hits deal half the normal damage (75% with 30% crit, 100% with 60% crit). IE properly converts his W if Stormrazor procs on it though, so that's a plus. If you build Stormrazor on Renekton, your flash+W will deal 50% reduced damage.
  • Riven: Her passive bonus damage can actually crit, TIL. IE interacts properly, too. Stormrazor deals more damage than it should tho (68% / 84% / 100% bonus damage at 0% / 30% / 60% crit).
  • Ryze: No interaction with E+Q
  • Shaco: His passive gets converted but interacts weirdly with Stormrazor. Stormrazor deals more damage than his passive but only sometimes overrides its damage. The chance of Stormrazor overriding the passive is your crit chance. Shaco's Q's bonus damage doesn't crit but the whole Q gets converted by IE. Shaco's clone properly deals true damage but Stormrazor doesn't work on it. Shaco's clone can't damage training dummies...
  • Shyvana: Her Q can crit and it even works with Stormrazor. It also gets converted by IE. Secondary targets take more damage than the primary target if Dragon Form Q crits, which seems like another bug. Her Q crit damage to secondary targets properly gets converted by IE (thanks AIL3ex).
  • Skarner: E bonus damage doesn't crit but it gets converted by IE. (thanks AIL3ex).
  • Sivir: W crit damage isn't modified by Stormrazor. It deals 100% bonus damage instead of 60%-100%.
  • Talon: If Q crits, IE properly converts it. No interaction with Stormrazor tho.
  • Tristana: no interaction with her E.
  • Trundle: Q bonus damage doesn't crit but it all gets converted by IE.
  • Twitch: His ult gets converted by IE properly but Stormrazor is a little bugged. His secondary targets subsequently take less bonus damage from the crit. For example, his fourth target took 54 damage when Stormrazor crit, but 42 when it didn't.
  • Urgot: His legs' bonus damage can't crit and IE does not convert any of it.
  • Varus: His W does not interact with IE, contrary to how it was on PBE.
  • Vayne: Her Q bonus damage can't crit but it gets converted by IE. Her E does not interact with IE.
  • Vi: Her W doesn't interact with anything. Her E bonus damage doesn't crit but the whole attack gets converted by IE, even the damage to secondary targets.
  • Volibear: Q bonus damage doesn't crit but gets converted. His E doesn't interact with Stormrazor or IE.
  • Wukong: His Q can crit and it gets converted by IE. Thanks, the_smallest_waffle !
  • Xayah: Her W doesn't interact with IE or Stormrazor but the passive gets converted properly.
  • Xin: His passive bonus damage can't crit but it gets converted by IE. His Q can fully crit and it also gets converted. Stormrazor causes his Q to deal more damage than it should, dealing 70%/85%/100% bonus damage at 0%/30%/60% crit.
  • Yasuo: Stormrazor only causes his Q/AA to deal 44%AD extra damage. This is due to his passive. His Q base damage can't crit but the AD portion can. The base damage does get converted by IE.
  • Yorick: Even though the tooltip makes his Q look like an autoattack modifier, crits only deal 100%AD bonus damage (60%AD-100%AD with Stormrazor). His whole Q benefits from IE.
  • Zed: His passive does not interact with crits or IE. Since IE converts part of his damage to true damage, his R deals a bit less damage with it. At least the tooltip is consistent with that one. (thanks Myth-Holly).
  • I actually don't have Kennen, J4, Illaoi, Ekko, and Zoe so I hope that some other redditors can test their interactions.

Extra Math

Recapping from what cartiershomie explains here:
Old crit damage: 2.5 * (1-r) where r is your damage reduction
New crit damage: .85 * 2 * (1-r) + .15 * 2 = 1.7 * (1-r) + 0.3
This breaks even at r = 0.625 which is 62.5% damage reduction which is achieved by having 166.6 armor.
So with IE+ one crit item your average damage per autoattack is:
Old patch: (0.5 * 1 + 0.5 * 2.5) * (1-r) = 1.75 * (1-r)
New patch: 0.4 * (1-r) + 0.6 * (1.7*(1-r)+0.3) = 1.42 * (1-r) + 0.18
The break even point is at 45.45% damage reduction, or 83.3 armor.
With IE+two crit items your average damage per AA is:
Old patch: 0.2 * (1-r) + 0.8 * 2.5 * (1-r) = 2.2 * (1-r)
New patch: 1.7 * (1-r)+0.3
The break even point is at 40% damage reduction, or 66.7 armor.
Alright, now let's get specific:

Conqueror

Conqulusion: Conqueror+IE are quite a bit worse against squishies now.
With Conqueror and new IE, crits deal 32% true damage.
With IE+30% crit
Old Patch: (0.5 * 1 + 0.5 * 2.5 ) * (0.2 + 0.8 * (1-r)) = 1.4 * (1-r) + 0.35
New Patch: (0.4 * 1) * (0.2 + 0.8 * (1-r)) + (0.6 * 2) * (0.32 + 0.68 * (1.r)) = 1.135 * (1-r) + 0.464
This breaks even at 57.0% reduction, or 132 armor.
With IE+60% crit
Old Patch: (0.2 * 1 + 0.8 * 2.5 ) * (0.2 + 0.8 * (1-r)) = 1.76 * (1-r) + 0.44
New Patch: 2 * (0.32 + 0.68 * (1-r) = 1.36 * (1-r) + 0.64
This breaks even at 50% reduction, or 100 armor.

Ashe

Conclusion: With only one Zeal item, the new IE is worse on Ashe than it is on other ADCs. With two Zeal items it's slightly better. Also when comparing old and new IE, keep in mind that new IE can actually convert Ashe's W and her first attack, the one that doesn't deal any bonus damage, if it crits.
The new Infinity Edge doesn't convert as much of Ashes damage to true damage because of the way her crits work. On other champions, if they have 60% crit, 60% of their autoattacks deal 15% true damage. These autoattacks are crits though, they deal twice the damage that their other autoattacks do. On Ashe, still 60% of her autoattacks are converted, but her crits deal the same damage her non crits do. Lets just compare numbers.
Last Patch, if you had IE and another 30% crit item you had 50% crit and 50% bonus crit damage. Her autoattacks all dealt 110%+50% * (1+50%) = 185% damage
Old patch: 1.85 * (1-r)
This Patch, you have 60% crit so your autoattacks deal 110%+60% = 170% damage. Additionally, 60% of your autoattacks have 15% of their damage converted to true damage.
New Patch: 0.6 * 1.7 * 0.85 * (1-r) + 0.6 * 1.7 * 0.15 + 0.4 * 1.7 * (1-r) = 1.547 * (1-r) + 0.153
The break even point is at 49.5% damage reduction, or 98 armor.
So with two 30% crit items:
Old patch: 2.3 * (1-r)
New patch: 0.85 * 2.1 * (1-r) + 0.15 * 2.1 = 1.785 * (1-r) + 0.315
The break even point is at 38.8% reduction, or 63.5 armor.

Caitlyn

Conclusion: Caitlyn got nerfed pretty hard by this.
I'm only gonna compare Headshot's damage, not the extra damage trapped people take. I'm looking at its average damage because some Headshots crit, some don't.
Last Patch, if you had IE+30% crit her Headshot dealt 50%+50% * (1+50%) = 125% of AD as bonus damage.
Last Patch average damage: (0.5 * 1 + 0.5 * 2.5 + 1.25) * (1-r) = 3 * (1-r)
This Patch, with 60% crit her headshot deals 50%+60% = 110% of AD as bonus damage.
This Patch average damage: 0.4 * (1+1.1) * (1-r) + 0.6 * 0.85 * (2+1.1) * (1-r) + 0.6 * 0.15 *(2+1.1) = 2.421 * (1-r) + 0.279
This breaks even at 51.8% reduction, or 107.5 armor.
With IE+60% crit headshot dealt 170% of AD as bonus damage. now it's 150% of AD
Old Patch average damage: (0.2 * 1 + 0.8 * 2.5 + 1.7) * (1-r) = 3.9 * (1-r)
This patch every attack crits for 200% AD damage, deals an extra 150% AD headshot damage and benefits from IE's damage conversion.
New Patch average damage: 0.85 * (2+1.5) * (1-r) + 0.15 * (2+1.5) = 2.975 * (1-r) + 0.525
This breaks even at 43.2% reduction, or 76.2 armor.

Garen

Conclusion: Crit Garen got nerfed hard.
Garen's E crits for 50% bonus damage. Before this patch, IE increased this to 100% bonus damage so it effectively doubled the effectiveness of crit.
With IE+one 30% crit item
Old patch: ( 0.5 * 1+0.5 * 2 ) * (1-r) = 1.5 * (1-r)
This patch: 0.4 * 1 * (1-r) + 0.6 * 0.85 * 1.5 * (1-r) + 0.6 * 0.15 * 1.5 = 1.165 * (1-r) + .135
This breaks even at 59.7% reduction, or 148 armor.
With IE+two 30% crit items
Old patch: (0.2 * 1+0.8 * 2) * (1-r) = 1.8 * (1-r)
This patch: 0.85 * 1.5 * (1-r) + 0.15 * 1.5 = 1.275 * (1-r) + 0.225
This breaks even at 57.1% reduction, or 133 armor.
So Crit Garen oneshotting squishies with his E is now merely a happy memory.

Miss Fortune

Conclusion: While old IE didn't really do anything for her ult, new IE finally makes crit synergize with Bullet Time.
Miss Fortune's R can critically strike for 20% bonus damage. With old IE, this was increased to 30%
With IE+30% crit
Old Patch: ( 0.5 * 1 + 0.5 * 1.3 ) * (1-r ) = 1.15 * (1-r)
New Patch: 0.4 * 1 * (1-r) + 0.6 * 0.85 * 1.2 * (1-r) + 0.6 * 0.15 * 1.2 = 1.012 * (1-r) + .108
This breaks even at 21.7% reduction, or 27.8 armor.
With IE+60% crit
Old Patch: ( 0.2 * 1 + 0.8 * 1.3) * (1-r) = 1.24 * (1-r)
New Patch: 0.85 * 1.2 * (1-r) + 0.15 * 1.2 = 1.02 * (1-r) + .18
This breaks even at 18.2% damage reduction, or 22.2 armor.
So MF is pretty happy about this.

Graves

Conclusion: While the old IE was bad on Graves, new IE is now about as good as it is on any ADC.
For the next calculations, my baseline won't be 100% AD, but instead it will be the first pellet's damage. This doesn't change anything, it just makes it easier to read.
So Graves' Autoattacks shoot 4 pellets with each one beyond the first only dealing a third of the damage. If he hits all 4 he deals 1+3 * 1/3 = 2 so twice the damage.
If Graves crits, he shoots 6 pellets and each one deals 40% more damage. So if he hits all 6 of them he deals 1.4+5 * (1/3) * 1.4 = 3.73 so almost twice the damage as when he doesn't crit.
Old IE only increased each pellet's bonus damage to 60% so his crits did 1.6+5 * (1/3) * 1.6 = 4.27 so IE only increased his total crit damage by about 14.5%. For other champions that was 2.5/2=1.25 so 25% increased total crit damage.
With IE+30% crit
Old Patch: (0.5 * 2 + 0.5 * 4.27) * (1-r) = 3.135 * (1-r)
New Patch: 0.4 * 2 * (1-r) + 0.6 * 0.85 * 3.73 * (1-r) + 0.6 * 0.15 * 3.73 = 2.702 * (1-r) + 0.336
This breaks even at 22.4% reduction, or 28.9 armor.
With IE+60% crit
Old Patch: (0.2 * 2 + 0.8 * 4.27) * (1-r) = 3.816 * (1-r)
New Patch: 0.85 * 3.73 * (1-r) + 0.15 * 3.73 = 3.171 * (1-r) + 0.560
This breaks even at 13.2% damage reduction, or 15.2 armor.
Don't be fooled by these numbers, new IE isn't OP on Graves. Old IE was just very bad.

I tested a ton of interactions with the new IE and Stormrazor

TL;DR

Sheen, IBG, and Trinity Force get partly converted to true damage by IE if the autoattack crits.
Statikk Shiv, too.
A lot of enhanced autoattacks benefit from IE's true damage conversion.
Don't build Stormrazor on Ashe.
Lifesteal applies to IE's true damage.
Crit Garen is dead.
Jhin's fourth shot and IE synergize well.
Crit MF's R is out of control.
Mordekaiser has bugs.
Stormrazor is bugged with Renekton's W. Full AD crocodiles, read below!
Stormrazor is slightly better on Sivir than it should be.

END TL;DR

I needed another reason to procrastinate today so I hopped into Practice Mode and tested a lot of interactions with the new crit items. Most of these are enhanced autoattacks or on-hit effects, so I tested whether the bonus damage can critically strike, whether the whole enhanced autoattack benefits from IE's true damage conversion if it critically strikes, and whether Stormrazor deals the correct amount of bonus damage. I wrote an extra math section at the end.
Also a lot of people seem to not know this, but Stormrazor's bonus damage scales with crit you bought from items. With 0% crit, it's 60% bonus damage. With 30% crit, 80% bonus damage. If you have 60% crit or more, Stormrazor deals 100% bonus damage.

Runes and Items

  • Lifesteal: Lifesteal applies to all true damage dealt by IE. This actually includes AOE abilities like Garen's E and Statikk Shiv!
  • Ravenous Hunter: Fully applies to IE's true damage, even if the critting ability is AOE (Ravenous Hunter is supposed to be 33% efficient for AOE)
  • Energized: Kircheis and RFC don't interact with IE or Stormrazor. Statikk Shiv gets converted to true damage if it crits, even if it gets procced by an attack that cannot crit, such as Ezreal's Q. Shiv interacts correctly with Stormrazor.
  • Sheen: If the triggering autoattack crits, the bonus damage from Sheen and Trinity Force benefits from the conversion. Iceborn Gauntlet deals some true damage to the primary target, all secondary targets only take physical damage. Lich Bane doesn't interact with Infinity Edge.
  • Runaan's Hurricane: Bug: When Stormrazor procs, the bolts should deal 180% damage. Weirdly enough, they actually do between 202%-208%. Also, if my math is right, IE converts 17% of the bolts' damage, not 15%.
  • Wit's End, Blade of the Ruined King, Nashor's Tooth, Guinsoo's Rageblade, Bloodrazor, Titanic Hydra, Duskblade, Muramana: No interaction with either IE or Stormrazor.
  • Press the Attack: Isn't converted to true damage.
  • Conqueror: With Conqueror and IE, 32% of all crit damage gets converted to true damage. See the math section below for more.

Champions

  • Aatrox: His W doesn't interact with Stormrazor or IE in any way :(
  • Anivia: Neither IE nor Stormrazor interact with her E.
  • Ashe: IE converts Ashes W because it counts as a crit (thanks CMcawesome) and Ashe can lifesteal off the true damage. For autoattacks, crits work differently on Ashe, go read her wiki page if you didn't know. IE only converts attacks that crit, e.g the attacks that apply the triple slow. IE does convert her first autoattack if it crits, even though that attack doesn't apply her passive's bonus damage. Stormrazor crits apply the increased slow but they don't deal any bonus damage. Don't buy Stormrazor on Ashe, also IE is weaker on her until she gets 100% crit. See the math section for IE.
  • Akali: Neither her passive nor her Q interact with crits or IE.
  • Blitzcrank: The bonus damage from his E doesn't crit, not even with Stormrazor, but it gets converted by IE. (thanks Wflagg).
  • Camille: Her Qs can't crit, not even with Stormrazor. If her Q procs Shiv, it cannot crit, not even with Stormrazor or 100% crit. Her R's on-hit doesn't interact with anything.
  • Caitlyn: Good candidate for the new IE. If the triggering autoattack crits, the headshot and W bonus damage get converted. As neither bonus damage interacts with crits, Stormrazor only deals 60%-100% AD extra damage. See her math section for more on headshot and IE.
  • Corki: Corki interacts correctly with the new items. With IE, his crits correctly convert Statikk's and Sheen's bonus damage to true damage (except for Lich Bane).
  • Darius: TIL Darius' W can fully crit. It also gets properly converted to true damage with IE. Stormrazor deals a bit more bonus damage than it should, though. I'm getting 70% bonus damage at 0% crit and 85% at 30%.
  • Dr Mundo: the AD from his E can obviously crit but the %own HP bonus damage can't. It does get converted to true damage with IE though.
  • Draven: his Q bonus damage doesn't crit but IE converts it to true damage if the autoattack does. Crits just deal 100%AD bonus damage in addition to his Q (60%-100%AD for Stormrazor). I don't have Draven so my friend I_am_a_kobold_AMA tested this for me. Thx bro.
  • Evelynn: IE doesn't interact with her E at all.
  • Ezreal: His Q can't crit. If Shiv crits on his Q, IE only converts Shiv's damage and Sheen is unaffected. Stormrazor doesn't interact with his Q at all, even if he has a Shiv.
  • Fiora: The first hit of her E can't crit, not even with Stormrazor. Her Q interacts with StormrazoShiv/Sheen the same as Ezreal's Q. Her E's second hit is correctly converted to true damage and overrides Stormrazor's damage.
  • Gangplank: While only the Attack Damage portion of his Q and E crit, the whole attack/barrel benefits from IE's true damage conversion. That means Q base damage, Sheen, and E bonus damage to champions. Stormrazor interacts properly with his Q and E. Attacking a barrel that still has 2 or 3 hit points wastes Stormrazor tho.
  • Garen: His Q works the same as Draven's Q. Stormrazor doesn't interact with his E in any way. Each spin of Garen's E can crit separately for 50% bonus damage, both the base damage and the AD scaling can crit. IE properly converts his E to true damage and, interestingly, lifesteal is fully applied to the true damage. See his math section for more.
  • Gragas: Q doesn't interact with Stormrazor or IE at all.
  • Graves: Graves' crits work differently. Go read his wiki page if you didn't know. IE interacts properly with his passive. Stormrazor makes him shoot 6 bullets but each one only deals about 26%(~ 32% with 30% crit) bonus damage. If you hit all 6 bullets, you deal about 70% bonus damage in total (~84% with 30% crit). Shiv is unaffected by his weird crit scaling. Also, see his math section for more.
  • Hecarim: His E's bonus damage doesn't crit but if the basic attack does, the whole attack benefits from IE's true damage conversion. Stormrazor works correctly and deals 60%-100%AD bonus damage (scaling with your crit chance).
  • Jax: Neither his W nor his R interact with StormrazoIE.
  • Jayce: His Cannon form W can crit and doubles its total damage. Stormrazor causes the entire autoattack to deal 60%-100% bonus damage. IE works properly.
  • Jhin: IE converts his entire fourth hit, even the %missing HP part. Stormrazor causes his fourth hit to deal less damage than it should though. Jhin mains, Ctrl-F search Pantheon, Shaco, or Miss Fortune to cry. Also, IE converts Jhin's R's 4th shot and Jhin lifesteals off of the true damage.
  • Jinx: The extra 10% damage that her rockets deal doesn't crit anymore. She deals 110% AD with rockets, increased to 210% when she crits (170% with Stormrazor). The entire rocket's damage benefits from IE's conversion.
  • Kalista: IE works properly. Stormrazor deals a bit less damage than it should, only dealing 57% bonus damage (78% with 30% crit).
  • Karthus: Neither IE nor Stormrazor interact with his Q.
  • Kindred: Her E's bonus damage cannot crit but her whole E gets converted by IE. Even the %missing HP part. (thanks Tutajkk).
  • Leona: The magic damage from her Q and R can't crit. Leona's Q and R both get converted by IE. This seems fishy because no other bonus magic damage gets converted (except for Statikk Shyv). Thanks OmegaSquadVeigar.
  • Lucian: IE works properly with his passive. I can't get Stormrazor to make the second hit crit and I feel stupid for even trying.
  • Master Yi: His Q doesn't interact with Stormrazorrazor but IE properly converts the damage if it crits.
  • Miss Fortune: Neither crits nor IE interact with the bonus damage from her passive. IE properly converts her Q if it crits. Stormrazor causes her Q to deal 67% bonus damage (both base damage and AD part are affected) (84% bonus damage with 30% crit). If her Q's first hit kills the target, the bonus damage is increased to 100%. Her ult can crit for 20% bonus damage, that is both the AD and the AP part. If one of R's waves crits, IE properly converts 15% of its damage to true damage. See her Math section for more. No interaction with Stormrazor.
  • Mordekaiser: His Q can't crit, same as Camille's. Neither IE's true damage conversion nor Stormrazor work on his Ghosts. I even tried buying IE on Mordekaiser, still no dice. That's 2 new bugs for the bug list! Again, thx I_am_a_kobold_AMA for helping me there
  • Nasus: Q's base damage can crit but the bonus damage from stacks cannot (thanks Tutajkk). Both get converted by IE.
  • Nautilus: Passive bonus damage doesn't interact with crits but it does get converted by IE.
  • Nidalee: When her Q crits, it deals 100%AD bonus magic damage (60/80/100%AD with Stormrazor and 30/60/100% crit). This looks funny because her Q's minimum damage is lower than 100% AD.Without AP and against a full HP target, it looks like crits more than double its damage. IE converts the whole Q if and only if the Q crits. Q'ing a hunted target doesn't count as a crit. (thanks vargleyton).
  • Nocturne: Passive bonus damage doesn't interact with crits. Only the passive's damage to his primary target gets converted by IE, any secondary targets take physical damage only. Somehow Vi's E works differently.
  • Pantheon: IE converts his Q if it crits and Pantheon can lifesteal off the true damage. Stormrazor does not work on his Q. If he has Stormrazor ready and attacks a low HP target, his E passive will override Stormrazor so no damage gets wasted. The Stormrazor proc does get consumed though.
  • Quinn: Her passive doesn't interact with crits or IE :(
  • Rek'Sai: Her Q can crit, but only to her primary target. IE converts the Q but only the damage to the primary target (thanks Bazman99).
  • Rengar: His Q bonus damage doesn't crit but it does get converted by IE. Same for his enhanced Q. I didn't check his R because I still have PTSD from this ability.
  • Renekton: His W can't crit but Stormrazor causes it to deal ... less damage. All two (three if empowered) hits deal half the normal damage (75% with 30% crit, 100% with 60% crit). IE properly converts his W if Stormrazor procs on it though, so that's a plus. If you build Stormrazor on Renekton, your flash+W will deal 50% reduced damage.
  • Riven: Her passive bonus damage can actually crit, TIL. IE interacts properly, too. Stormrazor deals more damage than it should tho (68% / 84% / 100% bonus damage at 0% / 30% / 60% crit).
  • Ryze: No interaction with E+Q
  • Shaco: His passive gets converted but interacts weirdly with Stormrazor. Stormrazor deals more damage than his passive but only sometimes overrides its damage. The chance of Stormrazor overriding the passive is your crit chance. Shaco's Q's bonus damage doesn't crit but the whole Q gets converted by IE. Shaco's clone properly deals true damage but Stormrazor doesn't work on it. Shaco's clone can't damage training dummies...
  • Shyvana: Her Q can crit and it even works with Stormrazor. It also gets converted by IE. Secondary targets take more damage than the primary target if Dragon Form Q crits, which seems like another bug. Her Q crit damage to secondary targets properly gets converted by IE (thanks AIL3ex).
  • Skarner: E bonus damage doesn't crit but it gets converted by IE. (thanks AIL3ex).
  • Sivir: W crit damage isn't modified by Stormrazor. It deals 100% bonus damage instead of 60%-100%.
  • Talon: If Q crits, IE properly converts it. No interaction with Stormrazor tho.
  • Tristana: no interaction with her E.
  • Trundle: Q bonus damage doesn't crit but it all gets converted by IE.
  • Twitch: His ult gets converted by IE properly but Stormrazor is a little bugged. His secondary targets subsequently take less bonus damage from the crit. For example, his fourth target took 54 damage when Stormrazor crit, but 42 when it didn't.
  • Urgot: His legs' bonus damage can't crit and IE does not convert any of it.
  • Varus: His W does not interact with IE, contrary to how it was on PBE.
  • Vayne: Her Q bonus damage can't crit but it gets converted by IE. Her E does not interact with IE.
  • Vi: Her W doesn't interact with anything. Her E bonus damage doesn't crit but the whole attack gets converted by IE, even the damage to secondary targets.
  • Volibear: Q bonus damage doesn't crit but gets converted. His E doesn't interact with Stormrazor or IE.
  • Wukong: His Q can crit and it gets converted by IE. Thanks, the_smallest_waffle !
  • Xayah: Her W doesn't interact with IE or Stormrazor but the passive gets converted properly.
  • Xin: His passive bonus damage can't crit but it gets converted by IE. His Q can fully crit and it also gets converted. Stormrazor causes his Q to deal more damage than it should, dealing 70%/85%/100% bonus damage at 0%/30%/60% crit.
  • Yasuo: Stormrazor only causes his Q/AA to deal 44%AD extra damage. This is due to his passive. His Q base damage can't crit but the AD portion can. The base damage does get converted by IE.
  • Yorick: Even though the tooltip makes his Q look like an autoattack modifier, crits only deal 100%AD bonus damage (60%AD-100%AD with Stormrazor). His whole Q benefits from IE.
  • Zed: His passive does not interact with crits or IE. Since IE converts part of his damage to true damage, his R deals a bit less damage with it. At least the tooltip is consistent with that one. (thanks Myth-Holly).
  • I actually don't have Kennen, J4, Illaoi, Ekko, and Zoe so I hope that some other redditors can test their interactions.

Extra Math

Recapping from what cartiershomie explains here:
Old crit damage: 2.5 * (1-r) where r is your damage reduction
New crit damage: .85 * 2 * (1-r) + .15 * 2 = 1.7 * (1-r) + 0.3
This breaks even at r = 0.625 which is 62.5% damage reduction which is achieved by having 166.6 armor.
So with IE+ one crit item your average damage per autoattack is:
Old patch: (0.5 * 1 + 0.5 * 2.5) * (1-r) = 1.75 * (1-r)
New patch: 0.4 * (1-r) + 0.6 * (1.7*(1-r)+0.3) = 1.42 * (1-r) + 0.18
The break even point is at 45.45% damage reduction, or 83.3 armor.
With IE+two crit items your average damage per AA is:
Old patch: 0.2 * (1-r) + 0.8 * 2.5 * (1-r) = 2.2 * (1-r)
New patch: 1.7 * (1-r)+0.3
The break even point is at 40% damage reduction, or 66.7 armor.
Alright, now let's get specific:

Conqueror

Conqulusion: Conqueror+IE are quite a bit worse against squishies now.
With Conqueror and new IE, crits deal 32% true damage.
With IE+30% crit
Old Patch: (0.5 * 1 + 0.5 * 2.5 ) * (0.2 + 0.8 * (1-r)) = 1.4 * (1-r) + 0.35
New Patch: (0.4 * 1) * (0.2 + 0.8 * (1-r)) + (0.6 * 2) * (0.32 + 0.68 * (1.r)) = 1.135 * (1-r) + 0.464
This breaks even at 57.0% reduction, or 132 armor.
With IE+60% crit
Old Patch: (0.2 * 1 + 0.8 * 2.5 ) * (0.2 + 0.8 * (1-r)) = 1.76 * (1-r) + 0.44
New Patch: 2 * (0.32 + 0.68 * (1-r) = 1.36 * (1-r) + 0.64
This breaks even at 50% reduction, or 100 armor.

Ashe

Conclusion: With only one Zeal item, the new IE is worse on Ashe than it is on other ADCs. With two Zeal items it's slightly better. Also when comparing old and new IE, keep in mind that new IE can actually convert Ashe's W and her first attack, the one that doesn't deal any bonus damage, if it crits.
The new Infinity Edge doesn't convert as much of Ashes damage to true damage because of the way her crits work. On other champions, if they have 60% crit, 60% of their autoattacks deal 15% true damage. These autoattacks are crits though, they deal twice the damage that their other autoattacks do. On Ashe, still 60% of her autoattacks are converted, but her crits deal the same damage her non crits do. Lets just compare numbers.
Last Patch, if you had IE and another 30% crit item you had 50% crit and 50% bonus crit damage. Her autoattacks all dealt 110%+50% * (1+50%) = 185% damage
Old patch: 1.85 * (1-r)
This Patch, you have 60% crit so your autoattacks deal 110%+60% = 170% damage. Additionally, 60% of your autoattacks have 15% of their damage converted to true damage.
New Patch: 0.6 * 1.7 * 0.85 * (1-r) + 0.6 * 1.7 * 0.15 + 0.4 * 1.7 * (1-r) = 1.547 * (1-r) + 0.153
The break even point is at 49.5% damage reduction, or 98 armor.
So with two 30% crit items:
Old patch: 2.3 * (1-r)
New patch: 0.85 * 2.1 * (1-r) + 0.15 * 2.1 = 1.785 * (1-r) + 0.315
The break even point is at 38.8% reduction, or 63.5 armor.

Caitlyn

Conclusion: Caitlyn got nerfed pretty hard by this.
I'm only gonna compare Headshot's damage, not the extra damage trapped people take. I'm looking at its average damage because some Headshots crit, some don't.
Last Patch, if you had IE+30% crit her Headshot dealt 50%+50% * (1+50%) = 125% of AD as bonus damage.
Last Patch average damage: (0.5 * 1 + 0.5 * 2.5 + 1.25) * (1-r) = 3 * (1-r)
This Patch, with 60% crit her headshot deals 50%+60% = 110% of AD as bonus damage.
This Patch average damage: 0.4 * (1+1.1) * (1-r) + 0.6 * 0.85 * (2+1.1) * (1-r) + 0.6 * 0.15 *(2+1.1) = 2.421 * (1-r) + 0.279
This breaks even at 51.8% reduction, or 107.5 armor.
With IE+60% crit headshot dealt 170% of AD as bonus damage. now it's 150% of AD
Old Patch average damage: (0.2 * 1 + 0.8 * 2.5 + 1.7) * (1-r) = 3.9 * (1-r)
This patch every attack crits for 200% AD damage, deals an extra 150% AD headshot damage and benefits from IE's damage conversion.
New Patch average damage: 0.85 * (2+1.5) * (1-r) + 0.15 * (2+1.5) = 2.975 * (1-r) + 0.525
This breaks even at 43.2% reduction, or 76.2 armor.

Garen

Conclusion: Crit Garen got nerfed hard.
Garen's E crits for 50% bonus damage. Before this patch, IE increased this to 100% bonus damage so it effectively doubled the effectiveness of crit.
With IE+one 30% crit item
Old patch: ( 0.5 * 1+0.5 * 2 ) * (1-r) = 1.5 * (1-r)
This patch: 0.4 * 1 * (1-r) + 0.6 * 0.85 * 1.5 * (1-r) + 0.6 * 0.15 * 1.5 = 1.165 * (1-r) + .135
This breaks even at 59.7% reduction, or 148 armor.
With IE+two 30% crit items
Old patch: (0.2 * 1+0.8 * 2) * (1-r) = 1.8 * (1-r)
This patch: 0.85 * 1.5 * (1-r) + 0.15 * 1.5 = 1.275 * (1-r) + 0.225
This breaks even at 57.1% reduction, or 133 armor.
So Crit Garen oneshotting squishies with his E is now merely a happy memory.

Miss Fortune

Conclusion: While old IE didn't really do anything for her ult, new IE finally makes crit synergize with Bullet Time.
Miss Fortune's R can critically strike for 20% bonus damage. With old IE, this was increased to 30%
With IE+30% crit
Old Patch: ( 0.5 * 1 + 0.5 * 1.3 ) * (1-r ) = 1.15 * (1-r)
New Patch: 0.4 * 1 * (1-r) + 0.6 * 0.85 * 1.2 * (1-r) + 0.6 * 0.15 * 1.2 = 1.012 * (1-r) + .108
This breaks even at 21.7% reduction, or 27.8 armor.
With IE+60% crit
Old Patch: ( 0.2 * 1 + 0.8 * 1.3) * (1-r) = 1.24 * (1-r)
New Patch: 0.85 * 1.2 * (1-r) + 0.15 * 1.2 = 1.02 * (1-r) + .18
This breaks even at 18.2% damage reduction, or 22.2 armor.
So MF is pretty happy about this.

Graves
